Homemade Kefir...

  1. Buy organic kefir starter grains at a health food store or online. (See link below)
  2. Wash a pint jar and it's lid thoroughly in very hot water.
  3. Put 1 Tablespoon of the kefir grains in the jar.
  4. Fill the jar about 2/3 full with organic milk.
  5. Place a thin cloth over the jar to ensure it being airtight and put on the lid.
  6. Put the jar in a dark place and let it sit for 24 hours. The temperature and the consistency you want will determine the amount of time you leave it out. If you like it thin leave it out for 12 hours. Also leave it out 12 hours if your climate is hot. If your climate is cold or you want it thicker leave it out for 48 hours.
  7. Open the jar and using a clean wooden spoon stir it well.
  8. Strain it through a sieve into another jar.
  9. Reuse the kefir grains by putting them in a new jar and repeating the process.

Note: Make sure all jars and utensils are extremely clean.
